Eggplant Pizza Rounds

Cooking Steps

Slice eggplant into 12 uniform rounds, 1/4-1/2″ thick.

Lay rounds on a sheet of parchment paper lined with paper towels.

Prick both sides with fork and sprinkle with salt.

Let sit for 30 minutes to draw out the bitterness and water.

On a baking sheet lined with parchment paper, lay out eggplant rounds and brush or spray with olive oil.

Bake at 350°F for 10 minutes, flip over, brush or spray again, and bake for an additional 10 minutes.

Remove from oven, add toppings and return to oven for a final 10 minutes.

Enjoy!

  3. From the photo it looks like the toppings are some kind of cheese, sundried tomatoes, marinara sauce, and olives.

  5. these are excellent, i put pizza sauce, chopped onions, chopped black olives, shredded cheddar cheese. be sure to follow all instructions to prep the eggplant.

Excellent and filling diner- even my pizza expert (husband) loved it, and went back for seconds :) This was my first eggplant dish ever, so the recipe’s prep detail on the eggplant was super helpful. My pizza sauce was tomato paste and canned plain tomato sauce with garlic, basil, oregano, parsley, salt, pepper and a touch of sweet (used Splenda but honey would probably work as well). I slap-chopped a stuffing like saute topping of onions, garlic, stop light peppers, breakfast sausage, bacon in bits and olive oil. Topped that with mozzarella, provolone and cheddar shreds.
