Cooking Steps

1. Steam cabbage in microwave with a bit of water in a loosely covered bowl; transfer steamed cabbage to nonstick frying pan with extra virgin coconut oil; season to taste; cook until cabbage is softened or to preferred texture

2. Remove cabbage and plate it, add in 2 large eggs to the same pan; cook over-easy leaving the yolk runny

  • 3.5 cups shredded cabbage
  • 1 TBSP extra virgin coconut oil
  • Black pepper to taste
  • Pink Himalayan salt to taste

  1. I riffed on this a bit – while steaming the cabbage I cooked some bacon and white onion in a frying pan. When the cabbage was done steaming I transferred it into the pan with the bacon and onions. Then added 2 eggs on top.
