Cooking Steps

1) Preheat oven to 350 degrees.

2) Mix all dry ingredients together. Wisk eggs and add in, then add all the rest of the ingredients.

3) Spray cookie sheet with non stick spray or line with parchment paper. Take tablespoon size balls of dough and flatten onto cookie sheet.

4) Bake for 15-20 minutes, until golden brown. Let cool. If you are in a humid or hot environment, I advise keeping these in the fridge.

Ingredients

  • 1 cup flaxseeds
  • 1/2 cup coconut flour
  • 1/2 cup almond flour
  • 1 banana mashed
  • 1 cup applesauce
  • 1/3 cup or 6 tbs coconut oil
  • 2 eggs
  • cinnamon and nutmeg (optional)
  • pinch of salt

    I made these today and they are very, very good. I didn’t have but about a 1/2 cup of flaxseeds so I added chocolate chia seeds to the mix. I made them without cinnamon or nutmeg but will add those spices in the next time. I do like the combo of the flaxseeds and chocolate chia seeds.

  2. I made these today, sooo good, they taste almost like banana bread. I only sprinkled cinnamon and nutmeg into the batter, probably would use a little more next time. Cookies for breakfast tomorrow:)
