Grain-Free Almond Butter Cookies

Cooking Steps

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

In a large bowl, stir together almond butter, coconut oil, and honey. Beat in egg and vanilla.

In a small bowl, combine almond meal, chia seeds, and baking soda. Stir dry ingredients into wet ingredients and mix well.

Scoop the dough 1 tablespoon at a time and roll into balls. Set the balls on the baking sheet and flatten them with a fork. Bake for 10 minutes, until the edges just start browning. Do not overbake or they will be dry!

  • 1 cup almond butter
  • 1/4 cup coconut oil
  • 1/4 cup raw honey
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups almond meal
  • 2 tablespoons chia seeds (optional)
  • 1/2 teaspoon baking soda

    I made these tonight – super easy and delicious. I might add a little more honey to be a touch sweeter and I did add coconut.

  7. I made these today, and while they were pretty tasty, they fell apart. I basically ended up with a bowl full of cookie crums. I’m going to make the best of it and use it for a topping, but any ideas what might have went wrong? They seem pretty dry, one piece that didn’t fall completely apart left my mouth parched.

  10. Made these today!! Delish. If they were crumbly…probably cooked too long. Here are the stats…not quite guilt free in my book but oh so good!

    If you quickly toss back five of these…which woukd not be hard to do….that is an easy 500 cals!
