Grain-Free Chocolate Coconut Muffins

Cooking Steps

Preheat oven to 400 degrees. Line a muffin pan with muffin cups.

In a large bowl, mix together coconut oil and honey. Whisk in eggs until combined. Add in vanilla and mix.

In a small bowl, whisk together coconut flour, cocoa powder, and baking soda.

Stir the dry ingredients into the wet ingredients and mix until incorporated.

Fold in chocolate chips and fill the muffin liners 2/3 full. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.

  • 1/2 cup honey
  • 6 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 cup Enjoy Life chocolate chips

  5. Awesome!! I was a little skeptical, OMG!…. I will be making theses again, minus the chips , and added toasted almonds tomthe tops. they are sweet enough without them!
