Grain-free, Gluten-free Bread

Added on March 7th, 2012 by our friend from http://www.j3nn.net/2012/03/05/grain-free-bread-gluten-free/

Cooking Steps

Chebe bread mix is made with cassava tuber flour also known as manioc or tapioca flour. I omit the cheese from the recipe and make 5 large rolls instead of 10-16 as suggested.

** Modified from original instructions **

Baking Instructions:

1. Preheat oven to 375° F.
2. Blend Chebe Original Bread Mix with 2 tbsp. oil and 2 large eggs. Slowly blend in exactly 1/4 cup water.
3. Knead dough with hands until it is smooth.
4. Divide dough into 5 pieces, rounding each into a ball shape. Place 2″ apart on ungreased baking sheet (line with parchment, nonstick mat, or nonstick foil if available).
5. Bake 18-20 minutes until lightly browned.

  1. I live in the Netherlands, where on earth am I going to find Chebe Bread Mix or Tapioca Flour??

  2. Is cassava/tapioca really considered paleo?

  3. Craig – They sell it on Amazon. I don’t know if there’s a European version of Amazon or if they ship overseas (prolly), but here’s the American link: http://www.amazon.com/Chebe-Bread-Original-Cheese-7-5-Ounce/dp/B001ACMCNU/ref=sr_1_1?ie=UTF8&qid=1331137513&sr=8-1

Victoria – Tapioca is a root vegetable, so I would eat it. I’m more primal than paleo, though, so I’m a little more flexible. I would have no trouble eating something like this, but it does contain milk. If you don’t do milk, that should answer your question.

  4. Has anyone else made these?! I’m curious what you all think about how they taste?
I love my cassava chips from Trader Joe’s… hoping these rolls could be used as an occasional burger “bun”… What do you think?

  5. I have made these and they do work for an occasional burger/sandwich bun if you can use the carbs, or for a “not-so-paleo” family member or guest.

  6. I just made these (found them at a local supermarket), and they are SO GOOD! They’re not quite like wheat rolls, but they are so close. I would serve these to my un-paleo guests, and they probably won’t be able to tell the difference.

BTW, my bad on the containing milk thing. I’ve seen this recipe on another site, and it called for milk. This one doesn’t. So, I was wrong.

  7. How much does 1 box of Chebe flour equate to in measuring the flour? I have tapioca flour from Bob’s Red Mill. The link for the Chebe shows the box has 7.5oz but that’s weight. So how many cups?

  8. Hi, there!
Thanks for sharing about the Gulten Free Bread recipe. I love to make some bread using my Zojirushi BB-HAC10 bread maker, such as banana bread, raisin bread, and honey bread but I never try to make this Gulten Free Bread. It seems so interesting to try.

I saved and printed your recipe. Your instruction is really clear and easy to follow. And, thanks to Bev for sharing the place to buy the Chebe.

  9. Bev – Just wanted to mention that the Chebe Bread Mix actually contains ‘dry milk’. So just as a ‘heads up’ for those who don’t do milk;~)

  10. However, the all purpose, pizza crust, & focaccia mixes do not contain dairy.

  11. I have the distribution for cassava flour and cassava bread (this one with cheese). I can sell some to individuals.
