This is an adaption to the infamous 3min chocolate mug cake recipe found on the inet, using Matcha, or green tea powder instead of cacao powder. One of my all time favorite baked goods is a non-Paleo Green Tea muffin recipe. Combining the best of both worlds here, I came up my favorite taste and convenience of a 3min cook time.

If you’ve never had matcha before, I suggest trying some at a specialty tea store (such as Teavanna where I buy mine at) before buying, as it has a very unique taste in nature, but lends wonderfully in baked goods.

Mix all ingredients in a bowl or deep coffee mug.

Pop into the microwave for 3 minutes.

Let cool for a few minutes, split in half if sharing with another person or consume right out of the bowl if you’re feeling indulgent.

*You can easily adjust the taste and moisture content of this cake by adjusting the amount of matcha powder and walnut oil. Or, if you’re in a chocolate mood, switch out the matcha entirely with 2tbs of unsweetened raw cacao powder.

Ingredients

  • 2 TBS almond flour
  • 2 TBS coconut flour
  • 1.5-2 tsp. Matcha powder (I use Teavanna brand)
  • 2.5 TBS walnut oil
  • 2 TBS raw honey
  • 2 TBS canned coconut milk
  • 1 egg
  • splash of vanilla extract

  1. think this would work with loose chai tea in place of the matcha??

  2. It might if you ground it up into a fine powder. Matcha is extremely finely ground, hence why it blends so well in recipes. Try it out! You could also brew a couple of very strong tablespoons of the chai to replace the coconut milk.

  3. How did this end up tasting? Also, how would I cook this if wanted to bake a bunch in a muffin pan?

  4. I made this into recipe into muffins for the oven doing the following:
    1/2 c. almond flour, 1/2 c. coconut flour, 2 tbsp matcha tea powder, 1 tsp baking powder – mix these together. In separate bowl, 4 eggs, 1/2 c. oil of your choice, 2/3 c. milk of your choice, 1/2 to 1 tbsp vanilla, 1/3 cup honey. Mix together wet ingredients, add in mixed dry ingredients. Whirl it with your egg beaters for a few seconds. Divide equally into 12 muffin cups. Bake @ 350 for 25 minutes. Mine turned out very well.
