Cooking Steps

This recipe was tweaked from one I found at Epicurious.com. Cook the bacon and ham in a large pot. When bacon is browned, remove meat and set aside. Add onions to the grease and cook a few minutes. Add garlic and bay leaves and cook 2 minutes. Add the tomatoes, broth, salt and pepper to taste. Cover and simmer for 20 minutes. Using an immulsion blender, puree until all tomatoes are crushed. Add the ham and bacon back into soup. Serve or can.

  • 2 lb green tomatoes, diced
  • 1/4 lb bacon. diced
  • 1/4 lb ham, diced
  • 1 bunch scallions, diced
  • 1 clove garlic, minced
  • 2 bay leaves
  • 3 C chicken broth
  • Salt
  • pepper
