Grilled BBQ Peppers with Egg and Beef

Cooking Steps

1. Toss the ground beef into a skillet over medium heat. Cook the meat about 2/3 done, then remove from heat and mix in 1/2 C Smokey Apple Paleo BBQ Sauce.
2. While your meat is browning, cut your bell peppers in half and hollow out them out by cutting out all the white parts.
3. Spoon the meat into each pepper shell, then top with an uncooked egg. Make sure the whole thing fits inside the pepper and isn’t at risk of spilling over.
4. Toss your stuffed peppers onto the grill for about 10 minutes. When the whites of the eggs are solid, take the pepper off of the grill. Top it with a spoonful of BBQ sauce and enjoy!

  • 4 Green Bell Peppers (bigger is better)
  • 1/2 lb Ground Beef
  • 8 Eggs
  • 3/4 C Caveman Bob's Smokey Apple Paleo BBQ Sauce
