Halloween Gingerbread Men

Cooking Steps

Meh! I was saving this for the 20th but apparently it’s been released early (yay!).

When Greg was flicking through the book he made me sit down and told me to be calm. Restraints may have been involved…and he might have told me from the front garden…through the window.

Its not that I have a thing for gingerbread men (well, except for Affordable Suppliment’s Daniel :P ) but gingerbread men were the reward of choice when I was in primary school and got through a day without setting fire to anything/one, or returning the scissors in a calm and non-airborn manner.

So, yes, I was excited. I may have jumped up and down like a mad man and sent lewd pictures of me and a rolling pin to Bill.

So here we go (ingredients)

1/2 a cup of molasses or maple syrup
1/4 cup pure maple syrup
3 tbsp palm shortening
1tbsp coconut milk
3 cups blanched almond flour
1/2 tsp cinnamon (I may have tripped and fell and used more…cinnamon is like crack for us greeks)
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 tsp baking soda

Preheat the oven to 180C (apparently 350F across the pond).
Heat the molasses in a sauce pan then add the maple syrup, pal shortening and coconut milk to the sauce pan. Stir the fucker then remove from heat.
Mix the dry stuff together then into the wet stuff until it looks like fully blended batter.
Stick the dough into the fridge for about 20 mins then roll it out to about a quarter inch thickness.
Use a cookie cutter then bake on parchment paper or cookie sheet (wtf is a cookie sheet?).

I decorated these with melted dark chocolate…like someone having a fit whilst riding a mechanical bull. I would have invested in a proper cake decorating set..but who wants to be that guy at the checkout?
