What it is paleo posse?? Ok, so it’s the end of the month, you got a week til you get paid and you’re still trynna paleo pimp it while ballin’ on a budget? Solution: ground beef. Total cost of this recipe, which feeds four, is around $8, figuring I got grassfed beef chuck at $5.99/pound. So this is proof you can absolutely get paleorrific without having to pawn grandpa Grok’s water buffalo loincloth hand-me-down… ;)

Recipe
- Heat large cast-iron pan to med-high heat with a lil olive oil
- Dice red pepper, red onion and garlic
- Chop lettuce (for spinach or other greens, just have ready)
- When pan is at heat, add diced vegetables and cook for 2-3 minutes until garlic picks up some color and veg just starts to get translucent
- Add ground beef and cook until desired doneness, seasoning with S&P
- Toss cooked beef and veg with lettuce/greens, serve on plates
- For adults, splash a lil balsamic on, for kiddies, let it ride
