Cooking Steps

1) Puree first 5 ingredients in food processor until smooth.

2) Add olive oil to hot large pan and stir in puree for 2 min. Stir in dry spice mix and cook until fragrant, 2-5 minutes.

3) Add sausage, tomato sauce/paste + water and stir to blend well. When bubbly add balsamic and stir again to blend. Turn heat to low and simmer while preparing cabbage.

4) Heat a large pot to med-high and melt lard. Add minced garlic and stir to coat. Immediately add cabbage and stir to coat. Cook, stirring frequently until cabbage softens and brightens a bit. If you like your cabbage caramelized, stir less frequently, but be careful not to burn.

Serve sauce over cabbage, garnish with Kalamatas, and NOM NOM NOM!

Ingredients

  • Puree: 1 lg carrot, 1 med zucchini, 1/4 cup fresh parsley, 1 Tbsp fresh garlic
  • Dry spice mix: 1 tsp oregano, 1 tsp basil, 1/4 tsp rosemary, 1 tsp thyme, 1/4 tsp marjoram, 1 tsp salt, 1/4 tsp black pepper, 1/8 tsp (pinch) white pepper
  • 1 lb Italian Sausage, cooked and diced, 10 oz Strained Tomatoes , 7oz Tomato paste + 8 oz water (Bionature glass jars,) 2 Tbsp Olive Oil, 1 Tbsp Balsamic Vinegar
  • Sm head cabbage: cored, rinsed, and sliced to ribbons, 3 Tbsp lard, 2 cloves garlic, minced
  • Kalamata olives to garnish
