Cooking Steps

Preheat oven to 325 F

Prepare all vegetables and set aside.

Wash beef heart and remove any fat from the surface. Cube the heart and then dredge in almond flour.

Heat the bacon fat in a dutch oven on medium-high heat, and add dredged beef heart making sure to work in batches.

Brown all sides of the beef heart and remove to a plate. Add more heart and repeat process.

*Don’t be afraid to add more fat to the dutch oven if your reserves seem sparse

Add chopped vegetables, garlic, sun dried tomatoes and spices to the dutch oven and stir.

Add stock and wine and bring to a boil. Add the beef heart back, cover and place in the oven for 1.5 hours or until meat is tender.

Garnish with sea salt and black pepper.

*Feel free to make this your own. Mushrooms or cauliflower would compliment nicely as well has some green beans.

Ingredients

  • 1 Beef Heart
  • 2 tbsp bacon fat; 1/4 - 1/2 cup of almond flour
  • 6-8 small - medium carrots chopped
  • 2 medium onions chopped
  • 2 medium potatoes cubed (or substitue with squash, sweet potato or turnip)
  • 3 cloves of garlic, chopped
  • 1 tbsp dried rosemary; 1 tbsp dried thyme
  • 1 handful of sun dried tomatoes
  • 1 cup beef stock (chicken stock works fine too)
  • 1/2 cup red wine (your favourite brand)
