Cooking Steps

Add everything for the stew, except for the coconut milk, crushed tomatoes and cashews, to a large hot frying pan and fry in butter until the chicken is done.

Then pour everything over into a pot and add the coconut milk, tomatoes and cashews.

Let simmer on low heat until the cauliflower rice is done.

Bring a pot of water to a boil and add the shredded cauliflower. Let boil for just a minute or so before draining the water.

Serve over cauliflower rice, eat and enjoy!

Ingredients

  • 4-5 chicken breasts, cut in bite size pieces.
  • 3 split and sliced onions.
  • 1 red bell pepper, diced.
  • 3-4 minced cloves of garlic.
  • 1 red chili, de-seeded and finely chopped.
  • 30-40 grams (1-1.4oz) of Garam Masala spice mix.
  • The juice of 2 limes.
  • 1 handful of cashew nuts.
  • One can each of organic coconut milkand organic crushed tomatoes.
  • Coconut oil.
