Cooking Steps
Add everything for the stew, except for the coconut milk, crushed tomatoes and cashews, to a large hot frying pan and fry in butter until the chicken is done.
Then pour everything over into a pot and add the coconut milk, tomatoes and cashews.
Let simmer on low heat until the cauliflower rice is done.
Bring a pot of water to a boil and add the shredded cauliflower. Let boil for just a minute or so before draining the water.
Serve over cauliflower rice, eat and enjoy!
