Kimchi Cauliflower Bacon Fried “Rice”
Step 1: Cook bacon in the oven for 20 minutes @ 400°. There’s no need to preheat. Once it’s done, slice the bacon into 1/2 in pieces.
Step 2: Add the garlic, onions, scallions, hotlinks, and cooking fat into a pan and cook for about 5 min. Then add the kimchi and mushrooms and cook for another 3-4 min.
Step 3: Scramble the eggs on low heat until fluffy in another pan. DO NOT ADD THE EGGS UNTIL THE END.
Step 4: Wash and chop the cauliflower. Then toss it in the food processor or blender and pulse until it has the same consistency as rice.
Step 5: Toss everything except for the eggs into a pan and let cook for about 5min. Once it’s done, throw in the eggs and mix everything together.
This is a fairly easy recipe. Feel free to throw in your protein of choice. I just used whatever I had left in the fridge. ENJOY.
