Lamb Kebabs with Mint Pesto

Cooking Steps

In a food processor, combine all of the mint pesto ingredients. Blend until smooth. Refrigerate.

In a bowl, combine all ingredients for the kebabs. Divide the mixture into six sections and form each section around the skewers. Grill until cooked (about 2 minutes per side…there are four sides to a kebab).

Ingredients

  • LAMB KEBABS:
  • 1lb fresh ground lamb, 1 cup chopped parsley, 1 egg
  • Juice of 1/2 lemon, 1/4 onion (minced), 1T raw honey
  • 1/2 tsp ground black pepper, 1/2 tsp ground coriander, 1/2 tsp paprika
  • 1/2 tsp ground celery seed, 6 skewers
  • MINT PESTO: 1 cup mint leaves, 1 cup parsley
  • 1/4 medium onion, 1/3 cup pine nuts
  • 2 garlic cloves, 5T olive oil
  • 1 tsp lemon zest
  • 1 tsp sea salt
