Lemon-Ginger Chocolate Fudge
Cooking Steps
Directions:
1. Break up dark chocolate and place in a bowl.
2. Combine all other ingredients in a pan over medium heat and stir well.
3. When mixture boils, pour over dark chocolate and stir. (You could pour it into a small tray here, but I just kept it in the bowl.)
4. Place in refrigerator until set (4-5 hours). Slice up and enjoy!





Sounds fantastic! Just one question…dry ginger or fresh?
Looks delicious, not totally paleo but a good cheat
@karen i tried this recipe using ground ginger. Only used 2 tbsp but felt it was still a bit too much. Next time i make it i’m going to use 1 tbsp (it was still v. nice tho)
Have made this a few times now. Best for me is with 1 tsp ground ginger and small amount fresh grated ginger (I use the zest grater before the lemon) with added sultanas, diced prunes, chopped fresh cherries, pistachios and macadamias in the mix, like a rocky road of sorts…
