Cooking Steps

Preheat oven to 375 F.
Spray oil in a muffin tin. You can really do it with any size, but this is based on the recipe on a 12-muffin tin.
Mix dry ingredients together well.
Add wet ingredients and mix thoroughly
Put in muffin tins (about 1/2 to 2/3 full) and bake for about 15 minutes.
Makes 12 muffins

Ingredients

  • 2 cups almond flour (almond meal)
  • ¼ cup sifted Organic Coconut Flour
  • 2 1/4 teaspoons baking powder
  • 1 Tbsp Flaxseed
  • 1/2 teaspoon salt
  • 1/2 cup plus 2 tablespoons Organic Virgin Coconut Oil
  • 1 lemon, juice and grated rind
  • 3 tablespoons honey
  • 6 eggs
  • 1/3 cup water + ¼ teaspoon vanilla

  2. This is the best recipe for a paleo muffin I have found. I would suggest adding a little bit more honey and maybe more lemon juice.
    Great recipe.

  3. can agave syrup be substituted for the honey…what else could be used instead of honey or agave syrup…can splenda be used?

  4. Awesome! These are so good! I made a second batch and added frozen blueberries. They were also great.

  5. Just made these…delicious. I was happily surprised considering the last time I tried making paleo muffins I found them to be some what “eggy”. These are super moist almost pound cake like. Even my very-skeptical-of-anything-gluten-free fiance liked these. I doubled the amount of lemon (used 2), the only thing I’d change would be to add more sweetener. Next time I’ll double that as well.
