Lemony Chocolate Coconut Truffles

Cooking Steps

- On a double boiler melt dark chocolate
- Add vanilla and lemon juice
- Add as much dessicated coconut as needed to make a solid dough (around 1/4 cup)

- Roll into balls and refrigerate for at least 2 hours

Ingredients

  • 100g organic 70% dairy free dark chocolate (I used Tesco Finest Organic Peruvian Chocolate - 70% Cocoa) (4 oz)
  • unsweetened dessicated coconut (exact amount will vary, but approx 1/4 - 1/2 cup)
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract

  1. Another idea would be to replace the coconut with a chopped nut of choice, I made these with almonds and they almost tasted like the dark ferrero rocher :)
