Mango Chicken Curry

Cooking Steps

Over a medium heat, gently saute the onion, garlic and chili in butter/coconut oil.
Stir in the turmeric, cumin, lime juice and half the mango pieces. Pour in the coconut milk. Simmer for 10 mins.
Remove from the heat and pour into a blender, blend until smooth.
Transfer back into the pan and add the chicken pieces. Gently heat for 10 minutes or until chicken is cooked through. Stir in the rest of the mango chunks and then serve immediately.

Ingredients

  • 1 large skinless, boneless chicken breast, cut into pieces
  • 1 large mango, cut into chunks
  • 1 small red onion, finely chopped
  • 1 tbsp butter, ghee or coconut oil
  • 2 cloves garlic, minced
  • 2 tbsps fresh cilantro, roughly chopped
  • 1 tsp turmeric, 1 tbsp fresh ginger, grated
  • 1/2 tsp cumin
  • 1 bird's eye chili, finely chopped
  • 1/2 can coconut milk, 4 tbsps lime juice (about the juice of a whole lime)
