Mango Chicken Curry

Cooking Steps

1) Add all ingredients, except cilantro to a slow cooker and cook on high for three to four hours or until chicken is thoroughly cooked and tender.

2) Remove the mango pit and serve the delicious flavorful curry warm, top with cilantro!

Ingredients

  • 1 1/2 lb of chicken cubed
  • 1 1/2 cups of green beans
  • 1 cup of diced bell peppers
  • 2 cups of chicken stock (or more as needed)
  • 1 cup of coconut milk
  • 1 1/2 tbsp of curry powder
  • 2 mangoes, peeled, and diced
  • 1 mango pit
  • 1 tbsp of cilantro

  1. This is very yummy! I made it with broccoli instead of green beans because it’s what I had available. I added salt, pepper, a little garlic powder and a little more curry. It came out a bit more “soupy” than I like so next time I will add less broth. The flavor is wonderful!

  2. I am going to serve it over “paleo rice” – grated cauliflower, steamed to perfection! It doesn’t absorb the liquid from the curry like white rice does, but it is healthy and delicious, just the same! Thanks for the recipe!

  3. I added the spices per jbrow190′s review and added a little coconut flour b/c I guess I did use too much liquid. Will serve w/steamed broccoli :)
