Mango Salsa

Cooking Steps

It’s mango season! But if it’s not, use peaches or nectarines instead.

Peel, pit and dice the mango. Peel, seed and dice the cucumber. Finely chop the red onion, jalapeno, and cilantro.

Combine all ingredients in a bowl. Season with salt and pepper to taste, chill, and serve with grilled chicken or pork.

  • 1 ripe but firm mango
  • 1/2 medium red onion
  • 1 jalapeno chile
  • 1 small cucumber
  • 3 Tablespoons fresh cilantro leaves
  • 3 Tablespoons fresh lime juice
  • Salt and pepper to taste

    You can serve this over salmon as well!

  2. This is a new favorite! I complained to my husband that our paleo meals have been kind of bland lately and we decided to punch up a regular chicken dinner with this salsa. It is so flavorful and we put it on everything for 3 days. We plan on making this monthly. Delicious.
