Maple Butter Bacon Bites

“Bite” Directions:

Combine coconut butter and chocolate. Grease 12 sections of a silicone mini-muffin tray with coconut oil and place on top of a flat baking sheet. Pour the chocolate-coconut butter mixture into the molds leaving about 1/2 to 1/4 inch of space. Drop a piece of bacon into each mold and lightly press it in to submerge.

Put the entire tray into the fridge to cool and harden.

“Frosting” Directions:

In a small bowl, combine bacon fat and ghee, mixing until smooth. Add vanilla, maple syrup, and cocoa and mix thoroughly.

Assembly Instructions:

When the bites have cooled, pop them out of the mold and place on a sheet of wax paper. Add a dollop of frosting on top of each bite. Store in the refrigerator until ready to serve.

Ingredients

  • 2-3 slices pre-cooked bacon cut into 9 small pieces
  • 3oz coconut butter (softened)
  • 3oz unsweetened baker's chocolate
  • 1 tbsp coconut oil
  • 2 tbsp bacon fat or lard
  • 1 tbsp unsweetened natural cocoa powder
  • 1/4 tsp bourbon vanilla
  • 2 tsp pure grade B maple syrup
  • 2 tsp melted ghee or butter
