Mini-Fruit Pizza

Cooking Steps

Steps to crEATe:

Fruit:

1.) Cut your fruit in small pieces. Set aside.

Crust

1.) Heat oven to 325°, grease 12 mini-pizza or hamburger bun trays with coconut oil or melted butter. Set aside.

Note: A regular size pizza pan can be used if you don’t have any small ones.

2.) In large mixing bowl mix dry ingredients, slightly sift with fork.

3.) In separate bowl, beat eggs, add remaining wet ingredients, mix well.

4.) Add wet to dry ingredients, mix with fork or small hand mixer. (If the batter seems to dry, add another Tbsp. of coconut milk.)

Note: Batter should be fairly doughy and tough, but NOT dry. Moist is best.

5.) Add equal amounts dough to compartments and spread evenly.

6.) Bake for 15-18 minutes at 325°.

7.) Remove from oven and let cool

Frosting

1.) With hand mixer, mix room temperature butter, coconut milk and goat cheese.

2.) Add honey, cinnamon, and vanilla. Mix thoroughly, removing any clumps. If you want your frosting super sweet, add more honey. This frosting was lightly sweet (the fruit makes it sweet enough.)

3.) Spread equal amounts frosting on mini-pizza crusts (make sure they are cool). Place frosted crusts in the fridge for 10-15 minutes before adding fruit (this will help in the decoration process.)

4.) Remove from fridge and decorate accordingly and to you or your kids specifications. This was the FUN part!

  • Crust/Dry: 1 cup coconut flour, ¼ cup potato starch, 1 tsp. baking soda, ½ tsp. salt, 1 Tbsp. cinnamon
  • Crust/Wet: 4 eggs beaten, 4 Tbsp. coconut oil melted, 4 Tbsp. butter grass-fed room temperature, 4 oz. unsweetened apple sauce, 4 Tbsp. honey, 2 tsp. vanilla extract, 7 Tbsp. coconut milk
  • Frosting: 1 cup coconut milk full-fat, 8 Tbsp. grass-fed butter room temperature, 4 oz. goat cheese, 3 Tbsp. honey, 1 tsp. vanilla extract, 2 tsp. cinnamon
  • Fruit Papaya Mango Pineapple Blackberries Strawberries Kiwi Banana Or whatever else you would like on there.
