Cooking Steps

Prep your cauliflower first and set aside. (This is great to freeze too so make ahead and save yourself time.)  Cut your bacon up into small bits and saute in bacon grease, set aside.  In your cast iron skillet, saute garlic, onion and Kale in remaining bacon grease. Saute until Kale is brownish in color, then add cream cheese. Mix until thoroughly melted together.  In a large pot, warm the broth and cauliflower puree, then add the kale mixture, and bacon. Warm on medium for 20 minutes so the soup can thicken. Salt and pepper to taste. This makes a large pot so enjoy for a few days!

Ingredients

  • 1 head cauliflower mash (chopped, boiled & pureed)
  • 3 cups broth
  • 3 pieces of bacon
  • 1/2 cup green onions
  • 2 hand fulls of chopped Kale
  • 4 oz cream cheese (optional)
  • 1 tsp garlic
  • 2 TBS bacon grease
  • Salt & Pepper to taste

    You can’t pick and choose what’s Paleo based on the carb content. People in this era wouldn’t think “OH hey potatoes, those are soooooo carby! I better not eat them!”
    They would think “FOOOOOD! MINE!”
    Good recipe though.

  3. I think it would be better to blend the broth with the cauliflower for a smoother texture. Pureeing the cauliflower leaves it chunky. Overall quite a decent soup, good for cold days.

  4. Delicious! I used my homemade chicken broth and it was even a hit with the kiddies. This will definitely be a regular menu item.

  5. Amazing soup!!! I added a little extra bacon, diced ham and some mozzarella cheese. I couldn’t even tell there weren’t potatoes in this soup.
