Cooking Steps

There are many options – you can toast your coconut threads and toast some of the almonds. This adds a lovely flavour.

Grind up nuts to a rough texture and leave some things whole for texture (I leave the sunflower and pumpkin seeds whole). Leave out what you want or add anything else – just mix everything until it looks like a good amount. Apricots are not low carb but there really is not much in the mix to worry. Alternatively leave out the protein powder use any sweetener you like and some cinnamon. Up to you :)

I usually mix enough to make about 3 cups and store in the fridge and eat about about 1/4 cup with Yoghurt or cream (a little goes a long way). I sometimes have it with half a banana or some berries.

Ingredients

  • 1 cup natural almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup coconut threads
  • 2 scoops of low carb vanilla protein powder
  • 1/4 cup LSA (linseed, sunflower and almond mix) or ground flax seed
  • Approx 10 chopped dried apricots
  • Anything else you want to add that is low carb

  1. Adding Chia Seeds can add a great texture!

    Cinnamon goes great with all this cereal.

    Also it is just as good cold as it is hot!
