Cooking Steps
Line a cookie sheet with parchment paper
food process the pecans and set aside
In a cooking pan on medium heat melt chocolate, olive oil, honey and almond butter
once it has a smooth consistency remove from heat and add cinnamon, pecans, and coconut (make sure all ingredients are covered in chocolate)
drop spoonfuls onto parchment paper and refrigerate until they harden (about 30 minutes)

I made these today and was THRILLED! I think I will replace half the amount of olive oil with coconut oil so that they firm up some more when cooled. But they tasted great! (I used almonds for the nuts).
I was just going to ask if I could coconut oil, in place of the olive oil. I am going to try these tonight.
I’m actually planning to start paleo soon, and i’m curious… if you can’t have sugar and carbs, how is this paleo… doesn’t honey have both… and chocolate? Just wondering… it looks great, but I guess I don’t know how this diet works yet.

@Stacey Nicole: Paleo is more about eating like our ancestors than simply “no sugar, no carbs.” Honey is something that would have been available and obtainable during the Paleolithic era, so it is fine to eat *in moderation*. That’s the key. It’s not like cavemen could run to the store to pick up a gallon of honey.
Question, can you leave out the honey or use stevia instead?
Does Raw honey have the sugars and crap in it? I eat that alot more then processed

I cut squares of wax paper and pushed them down into mini muffin tins; dolloped the mix into each and chilled. They look like reese’s peanut butter cups.
Just made these. They are awesome!!!!!!!!!! I split the volume of olive oil and used 1/6 cup olive and 1/6 cup coconut oil. They are so delicious. Love that they are paleo.
They were really good but I think I may leave out the oil next time.

These are AMAZING!! I did the same as others and went with half coconut oil half olive, and used walnuts in mine. I also took the advice of a previous comment and put them in a little muffin pan before freezing. I had already got the muffin liners so they literally came out like mini reeses like treats. Thanks for the recipe and all the helpful comments.
Made this recipe tonight but substitued the olive oil with coconut. It turned out great! Such an awesome treat!

These are amazing!! I’m wondering how I should store these cookies after they harden in the fridge? Should I store them in the fridge or are they ok in an air tight container in the pantry?
