Cooking Steps

Pre heat oven 425
Beat 4 eggs,add coconut milk and pure maple syrup

Melt butter in oven in a cast iron skillet-
10-14inch round

Sift dry ingredients before adding to egg mixture
Pour into skillet,place back in oven 30-35 minutes-serve with fresh fruit

Mixture should be runny

Serves 6

  • 1 1/2 Cup-sifted almond flour
  • 1tsp coconut flour
  • 1tsp seasalt
  • 11/2tsp nutmeg
  • 11/2tsp pumpkin spice
  • 1/3Cup pure maple syrup
  • 2Cups coconut milk
  • 2tsp butter
  • 4 eggs

  7. I made this for the kiddos today and served it with grass fed butter and a fresh berry “syrup,” and it was a huge hit! I had to take a taste too of course, and it was delicious! Definitely a pancake consistency, but not too dense. I did use only one cup of almond flour and 1/2 cup of coconut flour, and I used a cast iron skillet, so the cooking time was about 25-28 minutes. Thank you–definitely going to be a regular around here!
