Paleo Apple Pancakes

Cooking Steps

Mix the eggs, egg whites, flax seeds, coconut flour, cinnamon & almond milk together and blend well until smooth.
I used a coffee grinder to grind the chia seeds, and mixed them in as well.

Heat the coconut oil in a pan, and pour in the batter.
Add a few slices of apple, and bake on both sides until brown.
I put some almond butter on 1 half & folded the pancake, also great for on the go!

Ingredients

  • 2 whole eggs
  • 3 egg whites
  • 2 tablespoons of flax seeds
  • 1 tablespoon chia seeds
  • dash of cinnamon
  • 1 apple (unpeeled)
  • 1 tablespoon of coconut flour
  • dash of almond milk
  • coconut oil
  • Optional: Almond butter

  2. So good! I used flax seed meal in place of the flax seeds and it worked out fine. Also I discovered after making two that the sliced apples weren’t really working (for the flipping part) so I chopped them up more finely and mixed them into the batter.
