Paleo Banana Bread
Preheat oven to 175 deg celcius.
Add walnuts and coconut oil into food processor to create your walnut butter.
Peel your bananas and break them into pieces. Add them to your food processor with the walnut butter until you get a smooth paste.
In a large bowl, whisk eggs. Add your banana paste with almond meal, baking soda, baking powder, honey, vanilla extract and cinnamon. Mix well and combine until you get a smooth batter. Add a few pieces of uncrushed walnuts into the batter.
Grease your loaf pan with coconut oil or simply wrap a baking paper around your loaf pan.
Measurement of loaf pan:
Inside measurements at the top: LxW = 24 cm x 13 cm
Inside measurements at the bottom: LxW = 21 cm x 10 cm
Depth of pan: 6cm.
Pour batter into pan and bake for 25-30 minutes or until bread is cooked through and when it turns brown on top.
Let the bread cool for 10 minutes and cut the loaf into slices. Bon Appetit!
