Paleo Banana Bread

Cooking Steps

Place bananas, eggs, vanilla, honey and shortening in a food processor
Pulse ingredients together
Pulse in almond flour, salt and baking soda
Scoop batter into a greased 7.5″ x 3.5″ Magic Line Loaf Pan
Bake at 350° for 30 minutes
Remove from oven and allow to cool
Serve with Dandelion Root Coffee

Ingredients

  • 3 ripe bananas (about 1 ½ cups) mashed
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey
  • ¼ cup Spectrum vegan shortening
  • 2 cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • 1 teaspoon baking soda

  2. This is my favorite banana bread. Although, it needed more baking time the first time I made it and followed the directions exactly. However this time I did replace some things. I swapped coconut oil for shortening and agave syrup for honey, and one cup of almond flour for flax meal. We’ll see how it turns out!

  3. I skipped the shortening added a wee bit more honey and added walnuts AMAZING. Even my toddler loves it

  4. I want to use coconut oil instead of shortening, did that turn out ok?
