Cooking Steps

Place almond flour, coconut flour, flax, salt and baking soda in a food processor
Pulse ingredients together
Pulse in eggs, oil, honey and vinegar
Pour batter into a greased 7.5″ x 3.5″ Magic Line Loaf Pan
Bake at 350° for 30 minutes
Cool and serve

Ingredients

  • 1 1/2 cups blanched almond flour
  • 2 tablespoons coconut flour
  • 1/4 cup golden flaxseed meal
  • 1/4 teaspoon celtic sea salt
  • 1 1/2 teaspoons baking soda
  • 5 eggs
  • 1/4 cup coconut oil
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar

  3. This is so good! The texture is nice and light, even though I was too lazy to take out my food processor. I whisked the ingredients thoroughly, and the batter came out well-blended.

  4. This is really delicious! I’m not usually a big fan of flax but tried it anyway. I ran out of coconut flour so I substituted quinoa flour and it still turned out really well.

    A quick question: when you note almond flour on your ingredients list, does that mean that you just chop up almonds very finely until they are in near the consistency of flour or is there a special almond flour that must be purchased?

  6. Dear Terps… there actually is something called Almond Flour. Google Bob’s Almond Flour. It’s a basic paleo essential so stock up!

  9. Made this recipe twice. The first time I followed directions exactly and I liked the end product pretty well. The second time I made a few modifications and added the following:

    1 TB honey
    1 TB coconut flour
    1 TB flax meal
    2 TB hemp seeds
    1/2 banana (I smashed this really well into the wet ingredients)
    Light coconut milk at the end until batter reaches desired consistency (maybe about 1/4 cup… Not a whole lot, just enough to compensate for the extra dry ingredients… Add a little bit and stir until you’re satisfied.)

    With these additions I liked my second batch twice as much!

    I think the author has a particular one they use, but any old loaf pan will work.
