Cooking Steps

Directions:

line a 9×9 baking pan with parchment or wax paper
in a microwave safe bowl combine almond butter, coconut oil, and honey – heat for one minute
then in a large bowl add cocoa powder, melted ingredients and vanilla and mix until smooth
add in the coconut and make sure all coconut is covered
sprinkle in the chocolate chips and give it a few stirs
pour mixture on top of the parchment paper and let sit in the refrigerator for 2-3 hours
cut into small pieces and ENJOY!

note: these must remain refrigerated. they will melt if they get too warm.

  • 3/4 cup almond butter
  • 1/2 cup coconut oil
  • 1/4 cup honey (use less if you don't want it too sweet)
  • 1/2 cup cocoa powder
  • 1/2 cup unsweetened shredded coconut
  • 1/2 teaspoon pure vanilla
  • 1/2 cup Enjoy Life chocolate chips (or other paleo chocolate)

  2. I don’t want to incite a riot or anything, but I see a lot of paleo recipes with a reference to ‘microwaving’. Microwaving is bad. It changes the molecular structure of the food and is bad for your heart – among a list of other things. I’m just surprised to see a paleo lifestyle referencing it.

    The fudge looks amazing though. I’ll just use the stove to melt.

  5. Made this fudge last night and it is A-MAZING! Really fast and really easy. I doubled the recipe because I knew we would want more to snack on today :0)
    I did everything with a double boiler, not because microwaves are bad or good, but I tend to burn things easily and with a double boiler I can control the temp and keep an eye on it. Because of the coconut oil this fudge will get too soft if left out for a couple of hours. Coconut oil just melts so darn easy. If served fresh from the fridge and you know they will go really fast this recipe is perfect. Next time, I think I’ll try replacing half of the coconut oil with coconut manna (coconut butter). I think it will keep the fudge from becoming too soft but soft enough to still be called fudge.

  6. I completely agree with “resonnant” about microwaving, regardless of other opinions. Not to mention that so many people microwave plastic containers, which is even worse. And I was VERY surprised the first time I saw it on a paleo website too. I know paleo isn’t all about eating like the people from that era, but I can guarantee they didn’t radiate their food. My microwave came with the house and makes a lovely night light and exhaust fan for my kitchen. Saying something “isn’t that bad for you” is not really that encouraging and definitely not what I’m aiming for in my healthy lifestyle.

  8. This is my first fastpaleo recipe and I LOVE it. I made it tonight as directed and everyone in my family loved it (my husband told a friend that I just made him a delicious homemade chocolate bar). My pan was wide so the pieces are pretty thin when cut, but that’s perfect to keep us from having too much in one serving! I added chopped walnuts sprinkled over the top. YUM!

  11. Take it from a chocolate addict who’s been DYING without her chocolate fix during her 6 week Paleo challenge – this stuff is A M A Z I N G. Feels like I am cheating ;)

    I’ve made this recipe twice, tweaking it each time. First, I made it into maple fudge by adding 1/4 tsp. of maple extract, using maple syrup instead of honey, and omitting the coconut flakes. The second time, I made it into peppermint fudge by adding 1/4 tsp. peppermint extract and again omitting the coconut flakes; I also used 1 cup of coconut butter versus the 3/4 cup almond butter as directed. The fudge came out really nicely both times and received rave reviews from both paleo and non-paleo people! The almond butter yields a slightly smoother consistency, but the fudge turned out very nicely either way. I think adding 1/4 cup of whatever nut butter you decide to use helps keep it more stable at room temperature; either way, I’d be cautious to keep this out in a warm room. I highly recommend this to anyone looking for a reliable and flexible treat recipe! Very tasty!
