Paleo Orange Chicken
Cooking Steps
In a medium sized pot on medium heat, add the orange juice, zest, ginger, coconut aminos and chili garlic sauce. Let simmer to reduce and thicken while the chicken cooks.
In a saute pan, heat 3 T of FOC over medium high heat. Add chicken and cook until golden brown, approximately 5-6 minutes.
Add the chicken to the sauce and stir coat
Garnish with green onions

Made this for a late breakfast/early lunch with some steamed broccoli and yellow carrots. YUM! So glad I saw this earlier this morning — VERY quick to make before running kids around this afternoon.
I am prety new to paleo (3 months) sothis may be a stupid question. What does FOC stand for? I made a special trip to Whole Food for EVOO one day and didn’t realise it was just extra virgin olive oil. Trying not to make that same mistake again. thanks in advance for the help.

Hi Jeremy! Not sure what they were trying to get at with “FOC”, but it definitely means “coconut oil”. Just use 3 tablespoons of coconut oil to cook the chicken. I’d go with the regular organic stuff instead of the virgin organic because of the high-ish heat used.

This was amazing. I let the sauce cook down until it was super thick, more of a glaze. I also added a teeny bit of honey and doubled the garlic chili sauce because I like spice. After I added it to the chicken and simmer down a tiny bit more, I threw in some raw cashews which added some crunch. Seriously delicious. I don’t like chicken, but I love this and will definitely be making it again. It was so easy, so fast, and so so good.
As a newcomer to fastpaleo this is the first recipe I have tried and it is very easy to make and extremely tasty! I look forward to trying more recipes in the future.
