Cooking Steps
In a large bowl, combine the yams with the eggs, coconut flour, cinnamon, salt, and vanilla. Press the mixture down into a greased 4.8 QT (15x10x2) baking dish.
Bake at 350 degrees for 25-30 minutes, or until the top is browned and there are no liquid bubbles. Cool completely before cutting into bars.

These sound great and just what I”m looking for. I am making a 1/2 recipe since I only had 1 yam. Thank goodness too because shredding a yam takes a lot of muscles

They are good! Plain and yummy and not too sweet. I think they would be great with some nuts and more pumpkin spice too, like a pumpkin pie bar.
I added some walnuts, a little nutmeg, and a little ginger and they turned out great! Yum!
These were awesome!!!! I used my Vitamix to mix it together….made it like baby food consistency. I was concerned about the flavor, whether it would be sweet enough, so I threw in a small handful of raisins. Totally unnecessary. These are GOOOD! And my kids love them too (they usually snub their noses at anything with sweet potatoes in them). Definitely a keeper!
