Paleo Puffy Peach Pancake

Cooking Steps

Set your oven to broil, and position the rack about 12 inches from the top element.

Heat the coconut oil in a small non-stick (oven safe) pan over medium heat. Add the peaches, and start them sauteeing, giving them a toss occasionally.

Meanwhile, in a medium bowl, beat your eggs with the coconut milk, maple syrup, vanilla, and salt. Mix in the coconut flour and baking powder, and whisk until it is well combined.

By this time, your peaches should be getting a little colour. Lower your heat to medium-low, and pour your batter over the peaches. Cook on top of the stove for a minute or two, lifting the edges away, and tilting the pan to get the batter to run under. Finish under the broiler for another minute or two, keeping a close watch so it doesn’t burn. You just want the top to finish cooking.

Slide it out of the pan onto a plate, and dust with a bit of cinnamon if you like. Enjoy!

Note, I also made this with thinly sliced, unpeeled apples. Equally delicious!

  • 2 eggs
  • 1 peach, peeled and sliced
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp coconut or almond milk
  • 1/2 tsp vanilla
  • Good pinch of salt
  • 1 tbsp coconut flour
  • 1/2 tsp baking powder

  3. I made this with apples, cow milk, and molasses – they’re what I had on hand. The whole family enjoyed them, even my very picky, non-breakfast person!
