Paleo Pumpkin Pancakes
Cooking Steps
1. Mix together coconut flour, baking soda, salt, cinnamon, and nutmeg with a whisk.
2. In another bowl, whisk together eggs, coconut oil, coconut milk, apple cider vinegar, maple syrup, and pumpkin puree.
3. Gradually add the coconut flour mixture to the egg mixture as you whisk the ingredients together until well combined.
4. Heat coconut oil or butter over medium-low heat until melted.
5. Spoon the batter into the pan in whatever size you prefer. The batter is thick, so you can shape them with the spoon. They do not bubble like regular pancakes, so keep an eye on them to make sure they’re done on one side, then flip. They should need several minutes for each side.
6. Check the edges to see if they’re done. No raw batter should show.
7. Serve with maple syrup, fruit, butter, or plain.

Are you supposed to mix coconut oil with the eggs, etc. or is that a typo? Is is only for the pan?
These are amazing!!! (and yes the coconut oil goes with the wet ingridients)
These didn’t turn out for me at all they were super crumbly. However that didn’t stop us, we simply put them in a bowl with some apricots and ate them like “oatmeal”. Flavor was excellent! I don’t know if elevator was a factor or not? I may try these again next time and add an egg to see if I can get them to bind better.
FYI be sure to notate in your recipe all ingredient need to be @ ROOM TEMPERATURE (ie, eggs & coconut milk) otherwise the coconut oil will solidify!!!
I may have just wasted a significant amount of ingredients due to this omission
When you say “coconut milk” do you mean the beverage that comes in a carton or the thicker stuff that comes in a can? I would assume the latter, but just wanted to make sure.

These were super easy to make and turned out great. I like to add chocolate chips to everything because of my sweet tooth so I may add some dark chocolate chips next time.
Included one scoop whey protein powder, adjusted pumpkin to 1/3 cup and added extra egg. Still fluffy.
Does baking soda and ACV have to be used?
