Paleo Taco Soup

Cooking Steps

-Heat a large pan over medium heat
-When pan is hot, add the ground beef and brown
-Using a colander, drain the fat from the meat (if desired) and add it to the crock pot
-Place all other ingredients into the crock pot and cook on low for 6-8 hours
-Garnish soup with chopped fresh cilantro or sliced avocado

Ingredients

  • -1 lb ground beef
  • -1 red onion, chopped
  • -4 garlic cloves, minced
  • -1 tbsp. chili powder -1/4 tsp. each of garlic powder, onion powder, crushed red pepper flakes, and dried oregano -1/2 tsp. paprika -1 tsp. ground cumin -dash of salt and pepper
  • -2 cups chicken broth
  • -1 4oz can of fire roasted green chiles
  • -4 medium tomatoes, diced
  • -1 cup salsa

  1. Thanks for a great dinner idea. I have it in our crock pot now, but I only had beef bone stock. Can’t wait for dinner!

  2. Is it necessary to pre-cook the beef? I’ve seen recipes for chili that call for putting the raw ground beef directly into the crock pot with the other ingredients. Hoping I can cut corners and skip the first step :)

    The beef will definitely cook in 6 – 8 hours in the crock pot. I think pre-cooking has to do with texture and added flavor, but that’s just a guess.

  4. I mostly brown mine beforehand so I can break it up and so I can gook it enough to drain off the fat before throwing it in with everything else. If it has a high fat content, it can make the soup kinda greasy. If you are cooking it for that long, though, it should definitely cook through.

  5. I made a couple of adjustments, like using homemade venison bone stock and excluding the tomatoes- and it was fantastic! It was a flavor explosion in my mouth!

  7. Absolutely delicious!!! I will make this recipe often, though I did use beef broth instead of since I had it on hand. Will try chicken next time :)

  8. This is great for cold days out here in the Northwest. I did put my beef in while still frozen, and it worked just fine.
