Cooking Steps

Start by beating room temperature eggs. Then add in all wet ingredients. In seperate bowl combine all dry ingredients. Place dry ingredients into a sift and combine with wet ingredients. On a medium hot griddle or pan drop a spoonfull of mix, then use spoon to spread a little. Cook for 2-3 minutes and flip carefully ( this requires a very thin spatula) cook another 1-2 minutes.
Optional ingredients are pumkin or banana instead of honey.

Ingredients

  • 8 eggs
  • 1 can of full fat coconut milk
  • 1 cup of coconut flour
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 tablespoon of vanilla
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/8 teaspoon of ginger
  • Honey to taste

  5. Thank you for the comments, The pancakes make about 24 medium pancakes. We are a family of 6 it’s plenty for us with some eggs and bacon on the side.

  6. Hi, I just tried making these and having some problems. I have halved the recipe since 24 pancakes is way too much for just me. So 4 eggs, half a (400ml) can of coconut milk, half cup coconut flour, 1tsp baking powder, and a couple of mashed bananas for flavour. Done the first one over medium-high heat and ended up with a very soggy flat broken up mess. Added another half cup of c/flour and a bit more baking powder, not much difference. After adding more c/flour until I had quite a stiff batter I tried again, it held together this time, but still flat and soggy. What could be going wrong? Possibly the bananas making it too wet?

  7. Pam, I would ask did you shake the can of coconut milk before halving it? It’s baking soda not powder that can make a huge difference. Also what type of coconut flour?     Can I ask, is the image above actually a picture of what you made, or just a random picture of normal pancakes? Because mine looked absolutely nothing like those.

  9. Wow, great recipe! Didn’t add the honey but didn’t need it. I’ve been looking for a paleo pancake that comes close to regular pancakes and this is the best I’ve found!
