Cooking Steps

Peel and dice the sweet potato. Put in boiling water and boil 10-15 minutes ’til soft.
While the potato is cooking, grill the bacon for 8-10 minutes, turning once, until crispy. Cut into tiny pieces.
Take the sweet potato off the heat and drain. Add the butter and garlic to the pot. Mash ’til smooth.
Stir in the bacon pieces, parmesan and butter. Mix until the butter melts, add the salt and pepper if desired. Serve.

I used thick sliced bacon and cooked until crispy. I then cut up and put in the mashed sweet potatoes.

  3. These were REALLY yummy. I found them a bit dry and ended up adding a few splashes of organic chicken broth. It’s a definite KEEPER recipe for us… maybe saving the bacon bits for a garnish so it remains crunchy! ;o)
