Pepperoni Pizza Pot Pie
Cooking Steps
Brown the sausage in a bit of oil and let cool slightly.
Place the spaghetti squash in a large mixing bowl with the sausage, tomato sauce, eggs, and seasonings. Mix well and pour into a greased 2 QT baking dish. Bake at 400 degrees for 30-35 minutes, until firm to touch and lightly browned.
Remove dish from the oven and add your toppings–sprinkle extra meat, veggies, cheese, and whatever else directly on the casserole and make sure you add the pepperoni last so it seals in all the flavor and makes a nice little “crust” on the outside.
Broil for an additional 5-7 minutes. Enjoy!

Can’t wait to try this – love anything with spaghetti squash. However, when I try to Pin It with your pin button, the picture doesn’t pin. When I try to pin it myself, the picture pins, but the recipe doesn’t. Am I doing something wrong??

I just made this and ate half the pan by myself!!! SOO good! I didn’t use any cheese and it was still amazing! Great recipe!!
This was amazing! It could easily satisfy any italian food craving you might have. I thought it tasted a lot like a tomato basil cream pasta sauce with pork sausage. Think the eggs had a lot to do with lending creaminess.
Tip – I chose to use ground pork and I added andouille seasonings when I was browning it.
For those of you that made this, did you bake the spaghetti squash first?

This is so delicious! I saved the tomato sauce (pizza sauce actually) for the top of the “crust” and added lots of yummy veggies under the pepperoni. This is sure to cure any pizza cravings.

I added chopped zucchini to the meat mixture…pretty darn good
Just made this tonight and it was a big hit with my junk food junkies. It satisfied that pizza craving. I used cooked and mashed acorn squash because that is what I had, and it worked well. I did think it was a bit rich between the sausage and the pepperoni. We added onions & kale as toppings as well.
