Philly Cheesesteak Stuffed Peppers
Cooking Steps
DIRECTIONS
Slice peppers in half lengthwise, remove ribs and seeds.
Slice onions and mushrooms. Saute over medium heat with butter, olive oil, minced garlic and a little salt and pepper. Saute until onions and mushroom are nice and caramelized. About 25-30 minutes.
Preheat oven to 400*
Slice roast beef into thin strips and add to the onion/mushroom mixture. Allow to cook 5-10 minutes
Line the inside of each pepper with a slice of provolone cheese.
Fill each pepper with meat mixture until they are nearly overflowing.
Top each pepper with another slice of provolone cheese.
Bake for 15-20 minutes until the cheese on top is golden brown.
Serve and Enjoy!!

I thought the paleo diet did not include dairy? Confusing to see a recipe with cheese on it.
Luke, dairy is a grey area in the paleo world. You’ll find that some, who are very strictly paleo will not allow dairy in their diet, while others, who usually refer to themselves as more primal, will allow high quality dairy products like raw milk, butter, heavy cream, and even cheese.
I don’t think dairy is a grey area at all. Dairy, of any kind, is NOT paleo! There are some people who eat a ‘modified’ paleo diet that will eat dairy, in small quantities, from grass feed dairy cows. But to suggest that dairy is OK for paleo eaters would be misleading.
To be considered true paleo, dairy (any kind), grains (rice, corn, wheat, etc.), legumes (beans, peas, peanuts, etc.) & added sugars (processed, artificial or natural) are NOT to be consumed.

This was great if you eat cheese! Added crumbled bacon to the top and cooked on top rack of grill in individual packages of foil, leaving top exposed. About same amount of time as recipe recommends.
I agree… No dairy in Paleo… I guess this an be one of those cheat day meals i have to balance myself put from time to time
True.. this isn’t really a Paleo recipe, but damn was it good! I wouldn’t have it every day, because of the cheese, but once in a blue moon it’s ok.
Some minor changes/comments:
1. The onions and mushrooms get caramelized in less than 25-30 minutes. More like 15min and another 5min for the roast beef.
2. At first I baked it 15-20min, but the pepper was too raw and solid. While I do like fresh, raw pepper, for this recipe a softer pepper is needed. I ended up baking it around 25min or so, then turned off the oven and left it for another 10 minutes just because I wasn’t ready to eat then. It came out perfect. Based on that I think you should bake it for 30-35min at 350.
3. While the onions, mushrooms and roast beef were cooking, I spiced it all with Spike Seasoning for additional flavor.
4. I used about 10oz of cremini mushrooms, and was able to stuff 3 medium size peppers.
The result was amazingly yummy!
I just realized something. The recipe calls to cut the peppers in half *lengthwise*. I missed that, and cut them *widthwise*, and removed only the top. That’s why it fit 3 peppers, not two. If you do cut it lengthwise, you will have 4 halves and the filling should fit neatly.
omgosh eat some cheese, people. If you don’t want to eat cheese, don’t make this recipe and just let it go (in other words, keep your comments to yourself). People are so uptight. Looks good to me!
Hi guys! The “no dairy in paleo” understanding is, to be honest, a bit dated. Everyone you read now says that whether dairy is “paleo” or not depends on individual tolerance. We actually put a good amount of thought in how to handle this in creating the site. If you go to the Recipes page, you can simply choose between “Dairy” and “Non-Dairy” and get what you need. This is one place where it just doesn’t make sense to draw a hard line, and where individual tolerance should be considered, *particularly* with dairy, which can be a literal superfood when purchased raw/unpasteurized, very unlike many grains or added sweeteners. We need to think holistically

Actually, at the 2012 ancestral health symposium, dairy was extensively talked about. The take away, dairy when combined with a paleo diet is extremely pro growth and had substantial benefit to athletes.
generally raw and/or cultured dairy is the preference.
Man, you got me excited. That is not paleo at all.
