Cooking Steps

I eat variations of this as a sort of snack or cereal. All of the portions are to be set to your liking. I take tiny dabs of the whipped honey, almonds, raspberries and put them in a small bowl. I then pour in the coconut milk until the other ingredients peek above the surface. Stir it up and watch it turn into a pink swamp of delicious awesomosity!!

Making this can also be a fun activity for kids and of course they can customize it by adding other paleo food items such as different berries of various colors and only stirring it a little…or it will end up looking kinda gross :)

  • lite coconut milk
  • almonds (unsalted, roasted)
  • whipped honey

  4. why ‘lite’ coconut milk, I thought the coco fat was a good thing?

  5. @Betsy Marshall, I think regular coconut milk is fine and is healthy for you. If you choose to go with “Lite”, I would suggest buying regular and watering it down yourself since that is what “Lite” coconut milk is anyways, they just add water. You will get more out of it and save some money if you buy the regular! FYI I am not part of this site, this is just my own opinion regarding it being ok to use regular.

  6. The lite isn’t as thick. you can buy the regular and water it down if you wish. Thicker isn’t so bad, I just know my son doesn’t like it as much.
