Cooking Steps

Mash the bananas and add the eggs and vanilla, whisking together until well combined.

Combine the dry ingredients. Add to the egg/banana/vanilla mixture by spoonfuls, beating until smooth. Pour batter into a greased loaf pan. Bake at 350 degrees for 45-55 minutes, or until a toothpick inserted in the center comes out clean.

  • 1/2 c Coconut Flour
  • 6 Eggs, beaten
  • 1 t Salt
  • 1 t Baking Soda
  • 1/2 c Ground Flax
  • 2 t Cinnamon
  • 3 Mashed Bananas
  • 1 T Vanilla

  2. Banana bread was nice how long does it keep? and can you freeze the batter.

    Banana bread usually lasts just a few days. I tend to refrigerate mine. Judging from this recipe I don’t see why you should not be able to keep the batter in the freezer.

  4. Great recipe, very satisfying. On caveat though: only use the full 1 tsp of salt if you’re using kosher or sea salt. 1tsp of ordinary table salt is too much.

  5. Just took a loaf out of the oven and had to try some right away–delicious! It’s got a great texture and satisfying flavor, this will be a keeper for sure!

  6. This is a very hearty, dense bread. I prefer a lighter bread myself so I will probably keep searching for the right one for me but this did have nice flavor and was a great way to start the day.
