Pomegranate Bacon Brussels Sprouts

Added on March 27th, 2012 by our friend from www.gardenscrossfit.com

Cooking Steps

Wash brussels sprouts. Cut off the bottom portion of each sprout. Place in a steamer for about 8-10 minutes or until just soft. Meanwhile, add finely diced bacon to a pan and cook over medium heat. Keep the rendered bacon fat as the cooking substrate. Cook bacon for about 5-7 minutes. Once brussells sprouts are done steaming, remove, drain, and add to the pan. Saute for several more minutes, or until the sprouts are nicely browned and tender. Add lemon zest, lemon juice, salt and pepper. Add pomegranate arils (or blueberries). Toss and serve!
