Cooking Steps

Grate raw kumara/sweet potato and cook, you can either do this by boiling for 3-4 minutes then draining it, or pop in microwave covered and cook.
Chop up spinach finely and use your hands to crush/massage it until it starts to look like it has been cooked. Usually about 30 secs.
Add to kumara/sweet potato with all other ingredients and mix
Heat oil in a pan and cook.
These usually last about 3-4 days in the fridge and I have frozen them before also. However definitely taste best eating fresh!!

  • 2 eggs
  • 1/2 cup coconut flour
  • Spinach
  • Salt and pepper
  • Olive oil

  2. I made this sans flour, and it came out just as good! For those who don’t like using any almond or coconut flour this is a good option.
