In a small saucepan over medium heat, combine coconut milk, pumkpin, and honey and heat until steaming, stirring frequently. Pour into blender and add vanilla and pumpkin pie spice. Blend until frothy. Pour into mug and pour coffee/espresso over pumpkin blend. Top with coconut whipped cream and a few dashes of cinnamon if desired.

Ingredients

  • 1 cup coconut milk
  • 1 T 100% pure canned pumpkin
  • 1/2 T honey
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 1 small strong cup of coffee or espresso
  • optional : coconut whipped cream, cinnamon

  5. LOVE this one! I use whole organic milk instead of coconut milk and this thing is WAY better than the $4 version at Starbucks. I’ve made this 3 times this week already.
