Raw Choconut Bites

Cooking Steps

Combine all ingredients in a food processor and pulse about 15-20 times. Then run for about 20 seconds. Check consistency and make sure it’s pretty smooth. Pour into a glass dish (I used an 11×7 dish, but you could do 11×13 or a smaller one for thicker bites). Press down firmly with a spatula or fingers until nice and flat. Cut into bite-size pieces and enjoy! Store these in the fridge for the best taste!

Ingredients

  • 1.5 cups almond flour
  • 3 cups date (I use the Deglet Noor ones from Costco, but you can use whatever you can get your hands on–just make sure they’re pitted!)
  • 2 cups unsweetened coconut flakes
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp pure vanilla (Note: I tried this recipe with the pure vanilla from Costco and Cook’s Cookie Vanilla Extract, and I *highly* recommend the Cook’s brand. It makes a huge difference in the taste.)
  • 1/4 cup melted coconut oil
  • 2 TBSP water or coffee (I like them with coffee, but if you don’t like coffee, water worked great too)
