This is a GREAT substitute for potato bites. Serve as a snack or a side!
Preheat oven to 400 degrees.
Peel and cube your acorn squash.
Grease pan with olive oil. Drizzle olive oil over pieces and season to taste with sea salt and pepper. Bake for 30 mins.
Let cool a couple of minutes and then, pop the yummy mouth size bites in YO MOUF!
