This is how you make REAL Alfredo sauce, the same way they make it in Italy! We serve this sauce over grilled chicken and broccoli, or make zucchini noodles instead of grain pasta. And please, keep the ingredients grass-fed and raw!

  • 4 Tb butter
  • 1/2 C Heavy Cream
  • 6 Tb Parmesan Cheese
  • Salt and pepper to taste

Step 1

Melt butter on low.

Step 2

Take off heat and add in cream, parmesan, salt, and pepper. Replace the pan and stir until the sauce is smooth, without letting it come to a boil.

I'm a mommy to three boys with a passion for everything green and earthy. I love the primal/paleo lifestyle with a strong focus on traditional foods and "healthy" sweets that are sugar-free.

    I don’t get it.
    What makes this Primal?
It seems like your traditional alfredo sauce that you can find anywhere…?

Primal allows dairy in moderation, lots of recipes call for heavy cream and cheeses. You just have to limit yourself. My husband and I follow primal more than paleo…. But I use recipes from both :)

As far as making it primal… You have to use grass-fed butter, and I used pasture raised heavy cream. As far as the cheese I used fresh.

This is a great recipe. My surrogate mama in the Italian Alps made it this way exactly. The pastured butter, REAL Parmesan, and pastured, raw fresh from the cow heavy cream were amazing. People get too bent out of shape over paleo/not paleo; primal/not primal. The point is what makes you healthy and sane? REAL food is always better than fake food. A little bit of butter now and then is NOT going to kill you. I learned a whole lot about food in Itay… coming out of a lifestyle with OCD and eating disorders/anorexia. I no longer eat pasta, but I was healthier in Italy eating a ton of it than ever before. I am just now getting back to that level of energy and comfort with food. Mangia!
